30-Minute Easy Christmas Morning Cinnamon Roll Casserole

A quick and delicious Christmas morning breakfast made with refrigerated cinnamon rolls, eggs, and a creamy custard, topped with cream cheese icing. Perfect for busy holiday mornings when you need a crowd-pleasing dish in 30 minutes.

  • 2 cans (12.4 oz each) refrigerated cinnamon rolls (such as Pillsbury Grands!)
  • 4 large eggs, room temperature
  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • Icing packets from the cinnamon rolls
  • Optional: 1/4 cup chopped pecans or walnuts
  • Optional: Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with the melted butter, making sure to coat the corners.
  2. Open the cans of cinnamon rolls and set the icing packets aside. Unroll each cinnamon roll and cut into quarters (about 1-inch chunks). If the rolls are too sticky, freeze for 5 minutes first.
  3. Arrange the cinnamon roll pieces evenly in the prepared dish, leaving some space between pieces for the custard to flow.
  4. In a large mixing bowl, whisk together the eggs, milk, heavy cream, vanilla extract, ground cinnamon, and salt until smooth and slightly frothy, about 30 seconds.
  5. Pour the custard evenly over the cinnamon roll pieces. Gently press down on the pieces with a spatula or clean hands to help them absorb the liquid. Let rest for 5 minutes.
  6. Bake on the middle rack for 22-25 minutes, until the edges are golden brown and the center is set but still slightly jiggly. If the top browns too quickly, tent loosely with aluminum foil after 15 minutes.
  7. Let the casserole rest for 5 minutes. It will deflate slightly.
  8. Microwave the reserved icing packets for about 10 seconds to loosen. Drizzle the icing all over the warm casserole, spreading with a spoon if desired.
  9. Serve immediately. If using nuts or powdered sugar, sprinkle on right before serving.

Notes

Do not over-soak the rolls; 5 minutes of resting is plenty. Room temperature eggs are essential for a smooth custard. Check the casserole at 20 minutes to avoid overbaking. Grease the dish generously to prevent sticking. For best results, serve within 10 minutes of adding the icing.
