This classic chicken salad with grapes and pecans is creamy, crunchy, and perfectly balanced. Ready in 30 minutes using rotisserie chicken, it’s ideal for meal prep, potlucks, or a quick lunch.

  • 3 cups cooked chicken, shredded or diced (about 1 pound)
  • 1 cup red seedless grapes, halved
  • ½ cup pecans, roughly chopped and toasted
  • ½ cup celery, finely diced
  • ¼ cup green onion, sliced
  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh dill or parsley, chopped (optional)

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3-4 minutes until fragrant. Transfer to a plate to cool.
  2. If using rotisserie chicken, remove skin and shred meat into bite-sized pieces. If using leftover chicken, dice into small cubes.
  3. Rinse grapes, pat dry, and halve lengthwise. Quarter if grapes are very large.
  4. Dice celery into small pieces and slice green onions thinly.
  5. In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper. Adjust seasoning to taste.
  6. In a large mixing bowl, combine chicken, grapes, toasted pecans, celery, and green onions. Pour dressing over and fold gently until evenly coated.
  7. If using fresh herbs, sprinkle over and fold in gently.
  8. Cover and chill for at least 30 minutes before serving for best flavor.
  9. Taste and adjust seasoning before serving.

Notes

For best results, toast pecans and chill the salad before serving. The salad tastes even better the next day. Adjust dressing amount to your preference.
