  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (100g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 10 tablespoons (140g) unsalted butter

Instructions

  1. Brown the butter: Place 10 tablespoons unsalted butter in a medium saucepan over medium heat. Melt completely, then continue cooking, swirling occasionally, until it turns deep golden brown and smells nutty. Remove from heat immediately and pour into a heatproof bowl. Let cool for about 10 minutes.
  2. Prepare the apples: While butter cools, peel and core apples. Cut into 1/4-inch slices. Place in a large bowl. Add granulated sugar, brown sugar, flour, cinnamon, nutmeg, cardamom, lemon juice, and vanilla extract. Toss until every slice is coated. Let sit while making the topping.
  3. Make the oat crumble: In a medium bowl, whisk together oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Pour cooled brown butter over dry ingredients. Mix with a fork or fingers until mixture resembles coarse crumbs with some larger clumps.
  4. Assemble the crisp: Preheat oven to 375°F (190°C). Spread apple mixture evenly in a 9×13-inch baking dish. Sprinkle oat crumble topping evenly over apples, covering completely.
  5. Bake: Place dish on middle rack. Bake for 40-45 minutes, until topping is golden brown and apples are bubbling around edges. If topping browns too quickly, tent loosely with foil. Let cool on a wire rack for at least 15 minutes before serving.
