  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg, freshly grated if possible
  • 1/2 cup packed brown sugar (for topping)
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 3/4 cup pecans, roughly chopped
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F. Line a large baking sheet with parchment paper or foil.
  2. Roast the sweet potatoes: Spread the cubed sweet potatoes on the prepared baking sheet in a single layer. Drizzle with 2 tablespoons of the melted butter and toss to coat. Roast for 25-30 minutes, flipping halfway through, until tender with lightly browned edges.
  3. While the potatoes roast, make the topping: In a medium bowl, whisk together the brown sugar, flour, and salt. Add the cold butter cubes and cut them in using a pastry cutter or your fingers until the mixture looks like coarse crumbs with some butter bits still visible. Stir in the chopped pecans. Refrigerate until ready to use.
  4. Mash the sweet potatoes: Transfer the roasted sweet potatoes to a large mixing bowl. Add the remaining 2 tablespoons melted butter, brown sugar, bourbon, vanilla, salt, cinnamon, and nutmeg. Mash together until smooth but not completely uniform. Taste and adjust seasoning if needed.
  5. Assemble the casserole: Spread the sweet potato mixture evenly into a greased 9×13-inch baking dish. Sprinkle the cold pecan topping evenly over the surface.
  6. Bake: Reduce the oven temperature to 350°F. Bake the casserole for 25-30 minutes, until the topping is golden brown and the edges are bubbly. Let it rest for 5-10 minutes before serving.

Notes

Roast sweet potatoes instead of boiling to concentrate flavor. Use cold butter in topping for crunchier results. Let casserole rest after baking to set. Tastes even better the next day.
