  • 1/2 cup (113g) unsalted butter, softened
  • 1 cup (200g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) buttermilk, room temperature
  • 2 medium apples, peeled, cored, and chopped into 1/2-inch pieces (about 2 cups)
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon (for tossing with apples)
  • 1/2 cup (113g) unsalted butter (for caramel)
  • 1 cup (200g) packed light brown sugar (for caramel)
  • 1/2 cup (120ml) heavy cream (for caramel)
  • 1 teaspoon vanilla extract (for caramel)
  • 1/4 teaspoon salt (for caramel)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a small bowl, toss the chopped apples with 1 tablespoon granulated sugar and 1/2 teaspoon cinnamon. Set aside for 10 minutes.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a large bowl, beat softened butter and brown sugar with a hand mixer on medium speed until light and fluffy, about 3-4 minutes.
  5. Add eggs one at a time, beating well after each addition. Add vanilla extract and beat until combined.
  6. With mixer on low, add flour mixture in three additions, alternating with buttermilk. Mix just until combined.
  7. Gently fold the apple mixture into the batter with a rubber spatula.
  8. Pour batter into prepared pan and spread evenly. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Tent with foil if browning too quickly.
  9. Let cake cool in pan on a wire rack for 15 minutes, then invert onto rack to cool completely.
  10. While cake cools, make caramel: In a small saucepan, melt butter over medium heat. Add brown sugar and whisk until combined. Slowly pour in heavy cream, whisking constantly. Bring to a gentle boil, then reduce heat and simmer for 2-3 minutes. Remove from heat and stir in vanilla and salt. Let cool for 5 minutes.
  11. Place cooled cake on a serving plate. Drizzle caramel sauce over the top. Optionally, sprinkle with flaky sea salt. Serve warm or at room temperature.

Notes

For best results, use room temperature ingredients. The cake improves overnight as flavors meld. Caramel can be reheated gently if it thickens too much. For a gluten-free version, use a 1:1 gluten-free baking blend. For dairy-free, use vegan butter and substitute buttermilk with almond milk plus 1 tsp apple cider vinegar; use coconut cream in caramel.
