  • 2 cups vegetable broth (low-sodium recommended)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste (start with 1/2 teaspoon salt and 1/4 teaspoon pepper)

Instructions

  1. Sauté the aromatics (optional but recommended): Heat 1 tablespoon olive oil in a small skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  2. Combine everything in the slow cooker: Add the pumpkin puree, coconut milk, sautéed aromatics (or raw onion, garlic, and ginger), vegetable broth, cumin, turmeric, and red pepper flakes. Stir well to combine.
  3. Cook low and slow: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until flavors have melded and onion is tender.
  4. Blend (or don’t): For a silky smooth soup, use an immersion blender directly in the slow cooker. Alternatively, carefully transfer to a regular blender in batches. Leave chunky if preferred.
