These crispy brown sugar bacon smokies are the perfect party appetizer with a sweet, salty, and crunchy bite. Made with just three main ingredients, they disappear fast at any gathering.

  • 14 oz package little smokies
  • 1 lb thin-cut bacon
  • 1/2 cup packed light brown sugar
  • 1/4 tsp cayenne pepper or chili powder (optional)
  • Toothpicks (optional, soaked in water)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a rimmed baking sheet with parchment paper or aluminum foil and place a wire rack on top.
  3. Cut each bacon strip crosswise into thirds.
  4. Pat the little smokies dry with a paper towel.
  5. Wrap each smokie with a piece of bacon, stretching slightly. Secure with a toothpick if needed.
  6. Pour the packed brown sugar into a shallow bowl. Roll each wrapped smokie in the brown sugar, pressing gently to coat evenly.
  7. Place the coated smokies on the wire rack, seam-side down, leaving about half an inch between each.
  8. Bake for 25-30 minutes, turning once halfway through, until bacon is dark amber and crispy.
  9. Let them rest on the rack for 5 minutes before serving.

Notes

For extra crispiness, use a wire rack. Watch the sugar carefully in the last 5 minutes to prevent burning. Thin-cut bacon is essential; thick-cut will not crisp properly. Make extra as they disappear fast.
