  • 1/2 cup all-purpose flour (or gluten-free all-purpose blend)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup buttermilk (or 1/2 cup milk mixed with 1/2 tablespoon lemon juice, let sit for 5 minutes)
  • 1/2 cup buffalo hot sauce (like Frank’s RedHot)
  • 2 tablespoons melted butter (or vegan butter or olive oil)
  • 1/2 cup sour cream (or plain Greek yogurt)
  • 1/4 cup mayonnaise
  • 1/4 cup buttermilk (or regular milk)
  • 1 packet ranch seasoning mix (or 2 tablespoons homemade ranch seasoning: 1 tablespoon dried parsley, 1 teaspoon dried dill, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon dried chives…
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Remove the green leaves from the cauliflower head and cut it into bite-sized florets, about 1 to 1.5 inches wide. Try to keep them similar in size so they cook evenly. You should end up with about 4 to 5 cups of florets.
  3. In a large mixing bowl, whisk together the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Pour the buttermilk into the bowl with the flour mixture and stir until a thick batter forms. It should be about the consistency of pancake batter—thick enough to coat the back of a spoon but still pourable. If it’s too thick, add a tablespoon more buttermilk.
  5. Add the cauliflower florets to the bowl and toss gently with a spatula or your hands until every piece is evenly coated. Don’t overmix or the batter will get thin.
  6. Place the coated florets on the prepared baking sheet in a single layer, making sure they’re not touching. You might need to use two baking sheets or work in batches.
  7. Bake for 15 minutes, until the coating is set and the edges are starting to turn golden.
  8. While the cauliflower bakes, combine the buffalo hot sauce and melted butter in a medium bowl. Whisk until smooth.
  9. After 15 minutes, remove the baking sheet from the oven. Use a spatula to flip each floret over. Then, using a pastry brush or spoon, drizzle or brush half of the buffalo sauce over the florets. Reserve the remaining sauce for the final coating.
  10. Return the baking sheet to the oven and bake for 10 more minutes. The cauliflower should be tender when pierced with a fork, and the coating should be golden brown and slightly crispy.
  11. Remove the baking sheet from the oven. Drizzle the remaining buffalo sauce over the hot cauliflower and toss gently to coat.
  12. While the cauliflower finishes baking, whisk together the sour cream, mayonnaise, buttermilk, ranch seasoning mix, and lemon juice in a small bowl. Taste and adjust seasoning. Refrigerate until ready to serve.
  13. Transfer the buffalo cauliflower bites to a serving platter. Serve hot with the ranch dressing on the side for dipping.

Notes

For extra crunch, after the first 15-minute bake, brush on half the sauce, then sprinkle a light dusting of the dry flour mixture over the top before returning to the oven. To make dairy-free, use plant-based milk for the buttermilk, vegan butter, and dairy-free sour cream and mayonnaise. For a lower-carb option, swap the all-purpose flour for almond flour or coconut flour, but note the texture will be slightly different and less crispy.
