  • 4 ounces cream cheese, softened

  • Salt and pepper, to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) and sugar. Sprinkle yeast on top and let sit for 5 minutes until frothy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Mix until combined, then gradually add remaining 2 cups of flour. Knead with a dough hook for 5 minutes (or by hand for 8-10 minutes) until smooth and elastic.
  3. First rise: Place dough in a lightly greased bowl, cover, and let rise in a warm spot for 45-60 minutes until doubled in size.
  4. Shape the pretzel bites: Punch down dough and divide into 4 equal pieces. Roll each into a 12-inch rope, then cut into 1-inch pieces. Place on a parchment-lined baking sheet.
  5. Prepare the baking soda bath: Preheat oven to 425°F (220°C). In a large pot, bring 10 cups of water to a boil. Carefully add ½ cup baking soda (it will foam). Reduce heat to a gentle simmer.
  6. Boil the pretzel bites: Working in batches of 8-10, lower bites into the simmering water with a slotted spoon. Boil for 20-30 seconds per side. Transfer back to the parchment-lined sheet, spacing 1 inch apart.
  7. Add salt and bake: Sprinkle generously with coarse salt while still wet. Bake for 12-15 minutes until deep golden brown and glossy.

Gradually add shredded cheddar, whisking constantly. Stir in Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper. Keep warm over low heat.
