  • 1 medium head of cauliflower (about 2 pounds), cut into bite-sized florets
  • 1/2 cup all-purpose flour (or gluten-free flour blend)
  • 1/2 cup milk (any kind works—dairy, almond, oat, or soy)
  • 1 large egg (or flax egg for vegan option)
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (regular paprika works too)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray (or avocado oil spray)
  • 1/3 cup hot sauce (Frank’s RedHot recommended)
  • 2 tablespoons unsalted butter, melted (or vegan butter)
  • 1 teaspoon honey (or maple syrup for vegan)
  • 1/2 teaspoon Worcestershire sauce (optional)
  • Ranch dressing or blue cheese dressing for dipping (optional)
  • Celery sticks and carrot sticks (optional)
  • Fresh chives or green onions, chopped for garnish (optional)

Instructions

  1. Prepare the cauliflower: Cut the cauliflower into bite-sized florets, about 1 to 1.5 inches each. Rinse and pat very dry with paper towels. Let them sit on a clean kitchen towel for 10 minutes to air-dry completely.
  2. Set up your breading station: In the first bowl, mix the 1/2 cup flour with 1/4 teaspoon each of garlic powder, onion powder, smoked paprika, salt, and pepper. In the second bowl, whisk together the milk and egg until smooth. In the third bowl, combine the panko breadcrumbs with the remaining 1/4 teaspoon each of garlic powder, onion powder, and smoked paprika.
  3. Coat the cauliflower: Working in batches, toss a few florets in the flour mixture, shaking off excess. Dip into the wet batter, letting extra drip off. Roll in the panko breadcrumbs, pressing gently to stick. Place on a plate or baking sheet.
  4. Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
  5. Lightly spray the air fryer basket with olive oil. Place coated florets in a single layer (do not stack). Spray tops generously with oil. Air fry at 375°F for 10 minutes.
  6. Flip each floret using tongs, spray again with oil, and cook for another 5-8 minutes until deeply golden and crispy.
  7. While cauliflower cooks, make the buffalo sauce: Melt the butter in a small saucepan over low heat or in the microwave. Whisk in hot sauce, honey, and Worcestershire sauce (if using). Keep warm.
  8. Transfer crispy cauliflower to a large bowl. Pour warm buffalo sauce over and toss gently with tongs until coated. Serve immediately with ranch or blue cheese dressing, celery sticks, and a sprinkle of fresh chives.

Notes

For maximum crunch, do not toss cauliflower in sauce until right before serving. Ensure florets are bone-dry before breading. Cook in batches to avoid overcrowding the air fryer. Leftovers reheat best in the air fryer at 350°F for 3-4 minutes.
