These creepy-cute deviled avocados are filled with fresh guacamole and decorated to look like spooky eyeballs or spiders. They’re a quick, healthy, and fun Halloween appetizer that will disappear before the main event.

  • 6 ripe avocados
  • 2 limes, juiced
  • 1/4 cup red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 Roma tomato, seeded and diced small
  • Salt, to taste (start with 1/2 teaspoon kosher salt)
  • Black olives, for decorating (sliced for spider legs, whole for eyeballs)
  • Pomegranate seeds, optional for eyeballs
  • Sour cream or Greek yogurt, optional for eyeballs

Instructions

  1. Cut the avocados in half lengthwise. Run your knife around the pit, then twist gently to separate the halves. Remove the pit. Keep the skins intact.
  2. Scoop out the avocado flesh with a spoon, keeping the shells as clean as possible. Set the empty skins aside on a platter.
  3. Mash the avocado flesh in a mixing bowl with the juice of one lime and a pinch of salt. Mash until smooth but still with a few small chunks.
  4. Stir in the diced red onion, minced jalapeño, chopped cilantro, and diced tomato. Taste and adjust salt or lime juice as needed.
  5. Chill the guacamole in the fridge for 10 minutes to let flavors meld and make it easier to pipe.
  6. While the guacamole chills, prepare decorations: slice black olives into thin strips for spider legs, or cut whole olives in half for eyeballs. Set aside pomegranate seeds if using.
  7. Spoon the chilled guacamole into a piping bag or a zip-top bag with a corner snipped off (about 1/2 inch wide).
  8. Pipe the guacamole into the avocado skins, starting at one end and working to the other, creating a swirl or mound.
  9. Add decorations: For spider avocados, press four olive strips on each side of the guacamole mound for legs. For eyeball avocados, place an olive half in the center, add a tiny dollop of sour cream, and press a pomegranate seed into the cream for a pupil.
  10. Serve immediately or refrigerate. Best within an hour of assembly.

Notes

Use ripe but firm avocados so the skins hold their shape. Press plastic wrap directly onto the guacamole surface to prevent browning if making ahead. For best results, assemble just before serving. The guacamole can be made up to 24 hours in advance.
