  • 1/4 teaspoon black pepper
  • 1 large Roma tomato, seeded and diced (optional)
  • 1 large bag tortilla chips (restaurant-style or scoop chips)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber slices, halved or quartered
  • 1/2 cup pickled jalapeños
  • 1/2 cup black olives, drained
  • 1 cup shredded cheddar or crumbled cotija cheese
  • 1/2 cup sour cream or Mexican crema
  • Optional: sliced radishes, bell pepper strips, or jicama sticks

Instructions

  1. Prep the ingredients: Dice red onion, jalapeños, and tomato. Chop cilantro. Juice limes. Set aside 1 tablespoon of diced onion and a pinch of cilantro for garnish.
  2. Make the guacamole: Cut avocados in half, remove pits, and scoop flesh into a large mixing bowl. Add lime juice and salt immediately. Mash with a fork or potato masher to desired consistency (chunky recommended). Fold in diced onion, jalapeños, cilantro, tomato, and black pepper. Taste and adjust salt or lime as needed.
  3. Shape the football: Transfer guacamole to the center of a large serving board. Use a rubber spatula to shape into an oval (about 8-10 inches long and 4-5 inches wide), creating pointed ends.
  4. Add the laces: Using the back of a knife or small offset spatula, press two curved lines down the center of the football, about an inch apart. Make small crosswise cuts to mimic laces. Optionally use strips of bell pepper or thin radish slices for colorful laces.
  5. Build the charcuterie board: Arrange tortilla chips in clusters around the guacamole. Add cherry tomatoes, cucumber slices, pickled jalapeños, and black olives in small piles. Sprinkle shredded cheese or cotija over the board. Add small bowls of sour cream and any extra dips.
  6. Garnish and serve: Sprinkle reserved diced onion and cilantro over the guacamole football. Add lime wedges around the board. Serve immediately.

Notes

Use ripe avocados that yield to gentle pressure. Don’t over-mash for best shape. Use a damp paper towel under the board to prevent sliding. Keep lime juice generous to prevent browning. Chill board ingredients before serving. Shape guac on a separate plate first if nervous. Don’t skip the laces for visual effect. Guacamole can be made up to 2 hours ahead with plastic wrap pressed directly onto surface. Store leftovers with plastic wrap on surface for up to 24 hours.
