Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray generously with non-stick spray.
  2. Shred the zucchini. Wash the zucchini and trim off the ends. Using the fine side of a box grater, shred it onto a clean kitchen towel or paper towels. Gently press to absorb some moisture—do not squeeze dry. Set aside.
  3. Mix the dry ingredients. In a large bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt until no lumps remain.
  4. Mix the wet ingredients. In a medium bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and slightly thickened, about 30 seconds.
  5. Combine wet and dry. Pour the wet ingredients into the dry ingredients. Stir with a rubber spatula until just combined—a few streaks of flour should remain. Do not overmix.
  6. Fold in the zucchini and chocolate chips. Add the shredded zucchini and 1 cup of chocolate chips to the batter. Fold gently until evenly distributed. Reserve a handful of chocolate chips for topping.
  7. Fill the muffin cups. Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full. Sprinkle the reserved chocolate chips on top.
