A big, beautiful board of salty, crunchy, savory, and sweet bites that keeps everyone happy from kickoff to the final whistle. Ready in less than 30 minutes with no cooking required.

Ingredients

Scale
  • 8 ounces Genoa salami, thinly sliced
  • 6 ounces prosciutto
  • 6 ounces spicy capicola (gabagool)
  • 6 ounces soppressata
  • 8 ounces sharp cheddar, cubed
  • 6 ounces aged gouda, sliced
  • 4 ounces soft goat cheese log
  • 4 ounces blue cheese crumbles
  • 1 box (10 ounces) good quality crackers
  • 1 baguette, sliced and lightly toasted
  • 1 cup mixed olives
  • 1/2 cup Marcona almonds
  • 1/2 cup honey
  • 1/2 cup fig jam or pepper jelly
  • 1 cup red seedless grapes, in small clusters
  • 1/2 cup dried apricots or figs
  • 1/4 cup quick sweet and spicy pickled jalapeños
  • Small handful of fresh rosemary or thyme sprigs
  • Flaky sea salt

Instructions

  1. Start with your bowls. Place 3-4 small ramekins on the board in a triangular pattern or spaced out along the edges. Fill one with fig jam, one with honey, one with olives, and one with pickled jalapeños.
  2. Place the cheeses next. Put the goat cheese log in the center-left, cubed cheddar near the top right, sliced gouda in a small fan pattern near the bottom, and crumbled blue cheese in a small pile. Leave at least 2 inches of space around each cheese.
  3. Drizzle the goat cheese with honey from the ramekin. Sprinkle a tiny pinch of flaky sea salt and some fresh thyme leaves over the honey.
  4. Add the meats. Fold each slice of salami in half, then in half again, and stand it up on its edge to create salami roses. Place in a cluster near the cheddar. Crumple prosciutto into loose, ruffled piles. Pile capicola and soppressata in separate, slightly messy mounds.
  5. Add the crackers and bread. Fill remaining large open spaces with crackers, creating a cracker ‘river’ that snakes between cheese and meat piles. Place toasted baguette slices in a small stack or fan near the soft cheese.
  6. Add the fruit and nuts. Tuck small clusters of grapes into any remaining gaps. Sprinkle Marcona almonds in a few small piles around the board. Place dried apricots next to the aged gouda.
  7. Garnish with small sprigs of fresh rosemary or thyme throughout the board. Fill any big empty spots with extra crackers or almonds. Take a step back and admire your work.

Notes

Let cheeses sit at room temperature for 20-30 minutes before serving for best flavor. Always use small bowls for wet ingredients like olives and pickled peppers to keep crackers from getting soggy. Build in layers: bowls and cheese first, then meats, then crackers, then fill gaps. Make extra of everything to refill as needed.
