  • 34 mini pumpkins (Baby Boo, Jack Be Little, or Cinderella)
  • 1 wheel brie cheese (8 ounces)
  • 6 ounces aged cheddar, sliced
  • 6 ounces gouda, sliced
  • 4 ounces goat cheese log
  • 4 ounces prosciutto, thinly sliced
  • 4 ounces salami, sliced
  • 3 ounces pepperoni (optional)
  • 8 ounces assorted crackers (water crackers, whole wheat, buttery rounds)
  • 1 cup red grapes
  • 1 apple, sliced
  • ½ cup dried figs or apricots
  • ½ cup roasted almonds or pecans
  • ½ cup mixed olives (Kalamata or Castelvetrano)
  • Honey for drizzling
  • 2 ounces dark chocolate, broken into pieces
  • Fresh rosemary sprigs (optional)
  • Pomegranate seeds (optional)
  • Edible flowers (optional)

Instructions

  1. Prep the mini pumpkins: Wash and dry the mini pumpkins. If roasting, preheat oven to 350°F (175°C), cut tops off, scoop out seeds, and roast for 15-20 minutes until tender. Let cool completely. Otherwise, leave raw.
  2. Prepare the cheeses: Take brie out of fridge 30 minutes before serving. Slice cheddar and gouda into thin triangles or rectangles. Crumble goat cheese into small pieces. Place brie whole on board.
  3. Arrange the mini pumpkins: Place mini pumpkins in the center or slightly off-center of the board. Cluster two together and leave one on its own for visual balance.
  4. Add the cheeses: Place brie near one pumpkin. Fan out cheddar and gouda slices in small groups. Dot goat cheese around the board.
  5. Layer the meats: Fold prosciutto slices into loose ribbons. Roll salami slices into cylinders or fold into quarters. Place near cheeses. Pepperoni can go in a small pile or fanned out.
  6. Fill in with accompaniments: Add clusters of grapes, apple slices, dried figs, and nuts. Scatter olives in small bowls or directly on board. Place honey ramekin near brie. Break dark chocolate into pieces and tuck into gaps.
  7. Garnish and final touches: Tuck rosemary sprigs between pumpkins. Sprinkle pomegranate seeds over board. Add edible flowers if desired.
  8. Serve immediately at room temperature. If making ahead, cover loosely with plastic wrap and refrigerate for up to 2 hours. Let sit at room temperature for 20 minutes before serving.

Notes

Don’t overcrowd the board; leave space between items. For a crowd, make two smaller boards. If using decorative pumpkins from a craft store, do not eat them. Toss apple slices in lemon juice to prevent browning.
