Instructions

  1. Preheat your oven to 350°F (175°C) and allow it to fully preheat for about 15 minutes.
  2. Rinse the pumpkin seeds thoroughly in a colander under cold water, rubbing them between your fingers to remove any pulp. Discard any discolored or shriveled seeds.
  3. Pat the seeds dry with a clean kitchen towel or paper towels until slightly damp but not dripping wet.
  4. In a mixing bowl, combine the chili powder, salt, and garlic powder (if using). Whisk together with a fork.
  5. Add the pumpkin seeds to the bowl. Drizzle with oil and lime juice. Toss until every seed is evenly coated.
  6. Spread the seeds in a single layer on a baking sheet lined with parchment paper (optional).
  7. Roast for 10 minutes. Remove from the oven and stir the seeds with a spatula.
