  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • 1 large bag (1316 oz) restaurant-style tortilla chips
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (4 oz) can diced green chiles
  • 1/2 cup pickled jalapeños
  • 1 medium tomato, diced
  • 1/2 cup sour cream
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado or 1 cup guacamole
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes, until translucent. Add the ground beef, breaking it up with a wooden spoon. Cook for 5-6 minutes, stirring occasionally, until browned.
  3. Season the beef: Reduce heat to medium. Add minced garlic, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir and cook for 1 minute. Add beef broth and tomato paste, stir until incorporated and slightly reduced (about 2 minutes). Remove from heat.
  4. Prep the chips: Spread tortilla chips in a single layer on a baking sheet or oven-safe platter.
  5. Layer the toppings: Sprinkle black beans evenly over chips. Spoon seasoned beef over chips, distributing evenly. Add diced green chiles and pickled jalapeños.
  6. Add the cheese: Sprinkle Mexican blend cheese and sharp cheddar evenly over the entire tray.
  7. Bake: Place baking sheet in preheated oven and bake for 8-10 minutes, until cheese is melted and bubbly.
  8. Add fresh toppings: Remove from oven and let cool for 2 minutes. Sprinkle diced tomato and fresh cilantro over top. Add dollops of sour cream and guacamole or sliced avocado. Squeeze fresh lime juice over everything.
  9. Serve immediately: Place tray in center of table and let everyone dig in.
