Instructions

Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the rendered fat in the skillet (roughly 2-3 tablespoons).
  2. Sauté the aromatics: Reduce heat to medium-low. Add the diced onion to the bacon fat and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add the minced garlic and cook for 1 more minute until fragrant—don’t let it brown or it’ll turn bitter.
  3. Build the sauce: Pour in the bourbon and let it sizzle for 30 seconds, scraping up any browned bits from the bottom of the skillet. Add the maple syrup, ketchup, apple cider vinegar, brown sugar, Dijon mustard, Worcestershire sauce, smoked paprika, and cayenne if using. Stir until everything is combined and smooth.
  4. Simmer the sauce: Bring the sauce to a gentle simmer over medium heat. Let it cook for 3-4 minutes, stirring occasionally, until it thickens slightly and the flavors meld.
  5. Add the beans and bacon: Gently fold in the drained navy beans and half the cooked bacon. Stir until the beans are evenly coated in the sauce.
