These fizzy, not-too-sweet champagne jello shots are a sophisticated and cozy celebration treat. Made with a genius technique of pouring champagne directly into the mix, they’re light, jiggly, and perfect for ringing in the new year.

  • 1/2 cup cold water
  • 1/4 cup granulated sugar
  • 3 tablespoons unflavored gelatin powder (about 3 packets)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon honey or agave syrup (optional)
  • Red food coloring or natural beet powder (optional)
  • Fresh raspberries or pomegranate arils (for garnish)
  • Non-stick cooking spray or coconut oil (for greasing molds)

Instructions

  1. Bloom the gelatin: Pour cold water into a small saucepan. Sprinkle unflavored gelatin powder evenly over the surface. Let sit for 5-10 minutes until firm and wobbly.
  2. Heat the mixture: Place saucepan over low heat. Gently warm, stirring constantly, until gelatin is completely dissolved and liquid is clear (about 3-4 minutes). Do not let it boil.
  3. Add sugar and honey: Whisk in sugar and honey (if using) until completely dissolved. Remove from heat and let cool for about 2 minutes.
  4. Combine with champagne: Pour champagne into a liquid measuring cup with a spout. Slowly drizzle into warm gelatin mixture while whisking gently until well combined and slightly frothy.
  5. Add lemon juice and color: Stir in fresh lemon juice. Add food coloring or beet powder if using, and whisk until evenly distributed.
  6. Pour into molds: Lightly spray shot glasses or silicone molds with non-stick cooking spray. Place on a baking sheet. Carefully pour mixture into each mold, filling about 3/4 full.
  7. Add garnishes: Drop a raspberry or a few pomegranate arils into each shot glass. They will float and settle as the mixture sets.
  8. Refrigerate to set: Place baking sheet with filled molds in refrigerator. Let set for at least 4 hours, preferably overnight.
