These skewers combine juicy bratwurst and crispy, buttery pretzel buns for a quick and satisfying Oktoberfest-inspired dish. Ready in 25 minutes, they’re perfect for parties or a fun weeknight dinner.

  • 4 bratwurst links (fully cooked or fresh)
  • 4 large pretzel buns
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon coarse sea salt
  • Spicy brown mustard, for serving
  • 1 cup beer cheese sauce (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Slice each bratwurst link into 6-8 thick coins, about 1-inch (2.5 cm) thick.
  3. Cube each pretzel bun into 1-inch (2.5 cm) cubes.
  4. Thread the bratwurst pieces and pretzel bun cubes onto metal skewers, alternating between them. Aim for 4-5 pieces of each per skewer, leaving a little space between pieces.
  5. Melt the butter in a small bowl and brush it generously over every surface of the skewers.
  6. Sprinkle the coarse sea salt evenly over all the skewers.
  7. Bake for 12-15 minutes, until the pretzel cubes are golden brown and the bratwurst edges are slightly crispy. Rotate the pan at the 10-minute mark if needed.
  8. Let the skewers cool on the baking sheet for 2 minutes before serving.
  9. Sprinkle with fresh parsley and serve with spicy brown mustard and beer cheese sauce on the side.

Notes

If using wooden skewers, soak them in water for 30 minutes before assembling to prevent burning. For a grilled version, cook over indirect heat on a grill or grill pan. Leftover skewers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 350°F oven for 5-7 minutes.
