Bourbon Peach Cobbler Bars: Easy Boozy Southern Dessert

Buttery crust, jammy bourbon-peach filling, and a crumbly topping come together in these easy, crowd-pleasing bars. Perfect for cookouts, potlucks, or a cozy night in.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar, divided
  • 1 cup unsalted butter, cold and cubed
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg, lightly beaten
  • 4 cups fresh or frozen peaches, sliced (about 45 medium peaches)
  • 1/4 cup bourbon
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides. Lightly grease the parchment.
  2. In a large bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt. Add cold cubed butter and cut in with a pastry cutter or fingertips until mixture resembles coarse meal with some pea-sized butter chunks.
  3. Add beaten egg and stir with a fork until dough just comes together (it will be crumbly). Reserve 1 cup of mixture for topping. Press remaining mixture evenly into prepared pan.
  4. Bake crust for 12-15 minutes until lightly golden around edges. Set aside to cool slightly.
  5. In a medium bowl, combine sliced peaches, bourbon, remaining 1/4 cup sugar, cornstarch, lemon juice, and cinnamon (if using). Stir gently and let sit for 5 minutes.
  6. Spread peach mixture evenly over pre-baked crust. Sprinkle reserved crumb topping over peaches without pressing down.
  7. Bake for 35-40 minutes until topping is golden brown and filling is bubbly around edges. Tent with foil if topping browns too quickly.
  8. Cool completely in pan (at least 2 hours at room temperature or 1 hour in fridge) before slicing. Use parchment overhang to lift out, then slice into squares.

Notes

Keep butter cold for flaky crust. Don’t overmix the crust. Use ripe but firm peaches. Let filling rest for 5 minutes before baking. Cool completely before slicing for neat bars. Bars can be stored at room temperature for up to 3 days or frozen for up to 3 months.
