A happy accident turned into a signature fall drink—this cozy apple cider mimosa combines crisp, bubbly Prosecco with warm, spiced apple cider and a cinnamon sugar rim. It’s quick, easy, and perfect for brunches, gatherings, or a quiet autumn morning.

  • 1 cup (240 ml) apple cider, chilled
  • 1 cup (240 ml) Prosecco or brut sparkling wine, chilled
  • 1 tablespoon ground cinnamon
  • 2 tablespoons granulated sugar
  • 1 tablespoon unsalted butter, melted
  • Apple slices, for garnish (optional)
  • Cinnamon sticks, for garnish (optional)

Instructions

  1. Prepare the cinnamon sugar rim: In a small shallow dish, combine 2 tablespoons granulated sugar and 1 tablespoon ground cinnamon. Mix with a fork until evenly distributed.
  2. Rim the glasses: Use a pastry brush to lightly coat the rim of a chilled glass with melted butter. Dip the buttered rim into the cinnamon sugar mixture, rotating to coat evenly. Tap off excess sugar. Let sit for a minute to set.
  3. Add the apple cider: Pour 1/2 cup (120 ml) chilled apple cider into each prepared glass. Pour slowly down the side to avoid disturbing the rim.
  4. Top with Prosecco: Slowly pour 1/2 cup (120 ml) chilled Prosecco into the glass, tilting slightly to preserve bubbles. A beautiful fizzy layering effect will appear.
  5. Garnish and serve: Gently stir once with a cinnamon stick to combine. Add a thin apple slice to the rim if desired. Serve immediately while cold and bubbly.

Notes

Chill all ingredients and glasses beforehand for best results. Use a dry sparkling wine to balance the sweetness. Rim glasses just before serving to prevent sticky rims. For a non-alcoholic version, substitute Prosecco with sparkling apple cider or dry ginger ale. For a vegan option, use maple syrup instead of butter for the rim.
