Ingredients

Scale
  • 6 cups apples, peeled, cored, and sliced (about 6 medium apples)
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 tablespoons all-purpose flour
  • 1/2 cup store-bought or homemade caramel sauce
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup chopped pecans or walnuts (optional)
  • Vanilla ice cream or whipped cream (for serving, optional)
  • Extra caramel sauce for drizzling (optional)
  • Flaky sea salt (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel, core, and slice the apples into 1/4-inch thick slices.
  3. In a large skillet or saucepan over medium heat, combine the sliced apples, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cloves. Cook for 5-7 minutes, stirring occasionally, until the apples start to soften and release their juices.
  4. Sprinkle the 2 tablespoons of flour over the apples and stir well. Cook for another minute until the juices thicken slightly. Remove from heat and stir in 1/4 cup of the caramel sauce. Reserve the remaining 1/4 cup for later.
  5. In a medium bowl, whisk together the oats, 3/4 cup flour, 1/2 cup brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, and salt. Add the cold butter cubes and cut into the dry ingredients using a pastry cutter or two forks until the mixture resembles coarse crumbs with some pea-sized butter pieces. Fold in nuts if using.
  6. Spread the apple filling evenly in the prepared baking dish. Drizzle the remaining 1/4 cup of caramel sauce over the top. Sprinkle the oat streusel evenly over the filling without pressing down.
  7. Place the dish on a baking sheet and bake for 35-40 minutes, until the filling is bubbly around the edges and the streusel is golden brown and crisp. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  8. Let the crisp cool on a wire rack for at least 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream, extra caramel sauce, and a sprinkle of flaky sea salt if desired.

Notes

For best results, use a mix of sweet and tart apples like Honeycrisp and Granny Smith. Don’t skip the stovetop step for the apples—it prevents a watery filling. Let the crisp rest for at least 15 minutes before serving to allow the filling to set. The crisp can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
