Cozy Crockpot White Chicken Chili with Green Chiles

This creamy, comforting white chicken chili is made with simple ingredients and cooked low and slow in the crockpot. It’s a set-it-and-forget-it meal that’s perfect for cozy nights in and guaranteed to be a crowd-pleaser.

  • 1.5 lbs (about 680g) boneless, skinless chicken breasts
  • 2 cans (4 oz each / 113g each) diced green chiles (mild or hot)
  • 2 cans (15 oz each / 425g each) Great Northern beans, drained and rinsed
  • 4 cups (960ml) low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 4 oz (113g) cream cheese, softened
  • Optional: 1/2 cup (120ml) heavy cream (instead of cream cheese)
  • Optional toppings: fresh cilantro, shredded Monterey Jack or Pepper Jack cheese, diced avocado, lime wedges, tortilla chips, sour cream or Greek yogurt

Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, drain and rinse the beans, and open the cans of green chiles.
  2. Layer the ingredients in the crockpot: Place the chicken breasts in the bottom. Sprinkle the onion and garlic over the chicken. Add the drained beans and green chiles (with their liquid).
  3. Add the spices and broth: Sprinkle cumin, oregano, salt, and pepper over everything. Pour the chicken broth over the top. Do not stir.
  4. Cook low and slow: Cover and cook on LOW for 6-8 hours or on HIGH for 4-6 hours, until the chicken is fork-tender.
  5. Shred the chicken: Remove the chicken to a cutting board and shred with two forks. Return the shredded chicken to the pot.
  6. Create the creamy base: In a small bowl, whisk the softened cream cheese with about 1/2 cup of hot broth from the crockpot until smooth. (If using heavy cream, skip this step.)
  7. Combine and finish: Pour the tempered cream cheese mixture (or heavy cream) into the crockpot and stir gently. Let cook on LOW for another 15-20 minutes to meld flavors.
  8. Taste and adjust: Adjust salt, pepper, or add a squeeze of lime juice if desired.
  9. Serve: Ladle into bowls and top with desired toppings.

Notes

For the creamiest result, use full-fat cream cheese and temper it with hot broth before adding to the pot. This chili tastes even better the next day. To thicken, mash some beans or add a cornstarch slurry. For a spicier version, use hot green chiles or add a diced jalapeño.
