  • 1 cup (240g) pumpkin puree (not pumpkin pie filling)
  • 1/2 cup (120g) plain Greek yogurt (full-fat or 2%)
  • 1 cup (90g) rolled oats (old-fashioned)
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (100g) packed brown sugar (light or dark)
  • 2 large eggs, room temperature
  • 1/4 cup (60ml) vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg, 1/4 tsp cloves)
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together flour, rolled oats, baking soda, baking powder, pumpkin pie spice, and salt.
  3. In a large bowl, whisk together pumpkin puree, Greek yogurt, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and creamy.
  4. Pour dry ingredients into wet ingredients. Fold gently with a spatula until just combined (do not overmix).
  5. Let batter rest for 5 minutes to allow oats to soften.
  6. Divide batter evenly among muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool in pan for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For extra moist muffins, brush tops with melted butter as soon as they come out of the oven. Muffins taste even better the next day. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days. Freeze individually wrapped for up to 3 months.
