Instructions

  1. In a small bowl, whisk together the honey, soy sauce, minced garlic, tomato paste, rice vinegar, grated ginger, cinnamon, and black pepper until smooth.
  2. Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer.
  3. Pour the honey garlic mixture evenly over the chicken thighs, turning to coat each piece.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken reaches an internal temperature of 165°F and shreds easily with a fork.
  5. Carefully remove the chicken thighs to a plate and cover loosely with foil.
  6. Pour the cooking liquid into a small saucepan and bring to a simmer over medium heat.
  7. In a small bowl, whisk together the cornstarch and cold water until smooth, then slowly pour into the simmering sauce while whisking constantly. Cook for 2-3 minutes until thickened into a glossy glaze.
  8. Return the chicken to the slow cooker and spoon the thickened sauce over the top. Let sit for 5 minutes.
  9. Serve over rice or mashed potatoes, garnished with sesame seeds and green onions if desired.

Notes

For best results, use fresh garlic and low-sodium soy sauce. The cornstarch slurry is key to thickening the sauce—add it at the end, not the beginning. If the sauce is too thin, let it simmer a few more minutes; if too thick, stir in water a tablespoon at a time. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
