A creamy, peanut-buttery, banana-swirled overnight oat recipe that takes just 5 minutes to prep. Perfect for busy mornings, this no-cook breakfast is like a hug in a bowl.

  • 1/2 cup (45g) rolled oats
  • 1/2 cup (120ml) milk (any kind)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. In a mason jar or airtight container, mash the ripe banana with a fork until mostly smooth with a few small chunks.
  2. Add the milk, peanut butter, maple syrup (if using), and vanilla extract. Stir until the peanut butter is mostly incorporated.
  3. Sprinkle in the rolled oats, chia seeds, cinnamon, and a pinch of salt. Stir well until all oats are submerged.
  4. Seal the jar and shake for about 10 seconds to ensure even distribution.
  5. Refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds if desired.
  7. Top with sliced banana, extra peanut butter, cinnamon, or other toppings. Enjoy immediately.

Notes

For best texture, use old-fashioned rolled oats, not instant or steel-cut. The flavors develop more after a day in the fridge. To make a peanut butter drizzle, mix 1 tablespoon peanut butter with 1 teaspoon warm water. Store in the fridge for up to 5 days; do not freeze.
