A quick and easy overnight oats recipe with peanut butter and protein powder, perfect for meal prep and busy mornings. Creamy, satisfying, and endlessly customizable.

Ingredients

  • 1/2 cup (50g) rolled oats
  • 2 tablespoons (32g) peanut butter
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1/2 cup (120ml) milk (dairy or non-dairy)
  • 1/4 cup (60g) Greek yogurt (plain or vanilla)
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (15g) chia seeds
  • Optional toppings: sliced banana, dark chocolate chips, chopped peanuts, cinnamon, berries

Instructions

  1. In a mason jar or airtight container, combine rolled oats, protein powder, and chia seeds. Stir or shake to distribute evenly.
  2. Add milk, Greek yogurt, peanut butter, and honey or maple syrup on top of the dry ingredients. Do not stir yet.
  3. Stir everything together until well combined, ensuring no dry patches remain. The mixture should be thick but pourable.
  4. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk. Top with desired toppings and serve cold or at room temperature.

Notes

For extra creaminess, stir in an additional tablespoon of Greek yogurt before serving. The oats taste even better on day 2 or 3. Keep toppings separate until serving to prevent sogginess.
