This cozy salted caramel apple crisp is the perfect fall dessert—warm, comforting, and just a little bit indulgent. Tender, spiced apples are topped with a crunchy oat topping and luscious salted caramel, all baked to golden perfection.

  • 6–7 medium apples (about 2.5 lbs or 1.1 kg), peeled, cored, and sliced into ¼-inch thick pieces
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (15g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15ml) lemon juice
  • ½ cup (120ml) salted caramel sauce
  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) packed light brown sugar
  • ½ cup (100g) granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g or 1 stick) unsalted butter, cold and cut into small cubes
  • Optional: ¼ cup (30g) chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Lightly grease your 9×13-inch baking dish with butter or non-stick spray.
  2. Prepare the apples: Peel, core, and slice your apples into ¼-inch thick pieces. You should have about 8 cups of sliced apples.
  3. Make the filling: In a large bowl, combine the sliced apples with the granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss everything together with a rubber spatula until the apples are evenly coated.
  4. Layer the apples: Spread the apple mixture evenly into your prepared baking dish. Drizzle the ½ cup of salted caramel sauce over the top. Do not stir it in.
  5. Make the crisp topping: In a medium bowl, whisk together the oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add the cold, cubed butter. Using a pastry blender, two forks, or your fingertips, cut the butter into the dry mixture until it resembles coarse crumbs with some pea-sized butter pieces remaining. If using nuts, fold them in now.
  6. Assemble: Sprinkle the topping evenly over the apples and caramel. Do not press it down.
  7. Bake: Place the dish on a baking sheet and bake for 35-40 minutes, until the topping is golden brown and the filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  8. Cool slightly: Let the crisp sit on a wire rack for at least 15 minutes before serving.

Notes

Keep the butter cold for a crumbly topping. Let the crisp rest for 15-20 minutes after baking to allow the juices to thicken. You can assemble the crisp (without baking) up to 24 hours in advance and refrigerate. For extra caramel flavor, drizzle another tablespoon of salted caramel sauce over the top when it comes out of the oven.
