Cozy Slow Cooker Honey Garlic Chicken and Vegetables

A warm and comforting slow cooker recipe featuring tender chicken thighs glazed in a honey garlic sauce with hearty vegetables. Perfect for easy family dinners with minimal prep.

  • 2 pounds boneless, skinless chicken thighs
  • 3 medium carrots, peeled and cut into chunks
  • 1 pound baby potatoes, halved (Yukon Gold or red potatoes)
  • 8 ounces green beans, trimmed
  • 4 cloves minced garlic
  • 1/4 cup honey (85 g)
  • 1/4 cup low-sodium soy sauce (60 ml)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: 1/4 teaspoon red pepper flakes
  • Optional: Fresh parsley, chopped for garnish

Instructions

  1. Peel and chop 3 medium carrots into bite-sized chunks, halve about 1 pound (450 g) of baby potatoes, and trim 8 ounces (225 g) of green beans. Keep the green beans separate for now.
  2. Trim excess fat from 2 pounds (900 g) of boneless, skinless chicken thighs. Pat them dry with paper towels.
  3. In a medium bowl, whisk together 1/4 cup (85 g) honey, 1/4 cup (60 ml) low-sodium soy sauce, 2 tablespoons (30 ml) apple cider vinegar, 2 tablespoons (30 ml) olive oil, minced garlic (4 cloves), 1 teaspoon dried thyme, and a pinch of salt and black pepper. Adjust seasoning if desired.
  4. Place the chopped carrots and potatoes at the bottom of the slow cooker.
  5. Arrange the chicken thighs on top of the vegetables in a single layer.
  6. Drizzle the honey garlic sauce evenly over the chicken and vegetables. Gently coat everything without stirring too much.
  7. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken is tender and vegetables are soft but not mushy.
  8. About 30 minutes before the end of cooking, add the trimmed green beans on top, cover, and continue cooking.
  9. Check chicken for doneness (internal temperature should reach 165°F/74°C) and adjust seasoning with salt or pepper if needed.
  10. Serve warm, garnished with fresh parsley if desired.

Notes

Pat chicken dry before adding sauce to help glaze stick better. Layer vegetables at the bottom to prevent mushiness. Add green beans in the last 30 minutes to keep them crisp-tender. Avoid lifting the lid frequently to maintain cooking temperature. If sauce is too thin after cooking, remove chicken and veggies and reduce sauce on high uncovered for 15 minutes.
