Cozy Slow Cooker Oktoberfest Sausage and Cabbage

A hearty and comforting slow cooker dish featuring smoked sausage, tender cabbage, and a savory broth with hints of apple and caraway. Perfect for busy weeknights or cold weather.

  • 1.5 lbs (680g) smoked sausage or bratwurst
  • 1 medium head green cabbage (about 2 lbs or 900g), chopped into 2-inch chunks
  • 1 large yellow onion, chopped
  • 1 large Granny Smith apple, peeled and diced
  • 3 cloves garlic, minced
  • 1 cup (240ml) low-sodium chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon caraway seeds
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients: Chop cabbage into 2-inch chunks, dice onion, peel and dice apple, mince garlic.
  2. Optional: Slice sausage into 2-inch pieces and brown in a hot skillet over medium-high heat for 2-3 minutes per side.
  3. Layer half the chopped cabbage at the bottom of a 5-6 quart slow cooker. Top with half the diced onion, half the diced apple, and half the minced garlic.
  4. Arrange sausage pieces on top of the first vegetable layer.
  5. Add remaining cabbage, onion, apple, and garlic on top of the sausage.
  6. In a small bowl, whisk together chicken broth, apple cider vinegar, Dijon mustard, caraway seeds, smoked paprika, salt, and pepper. Pour evenly over everything in the slow cooker.
  7. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until cabbage is tender but not mushy.
  8. About 30 minutes before serving, gently stir. Taste broth and adjust seasoning if needed.
  9. Ladle into bowls, garnish with fresh parsley if desired, and serve with crusty bread or mashed potatoes.

Notes

For a thicker sauce, remove sausage and cabbage at the end and simmer the liquid on the stovetop for 10-15 minutes. The dish tastes even better the next day. If using red cabbage, the color will turn unappealing; stick with green.
