Cozy Slow Cooker Tomato Basil Soup with Fresh Tomatoes

A velvety, hands-off tomato basil soup made with fresh tomatoes in the slow cooker. It’s comforting, budget-friendly, and perfect for cozy days.

  • 3 pounds (1.4 kg) fresh Roma or San Marzano tomatoes, cored and quartered
  • 1 large yellow onion, roughly chopped
  • 45 garlic cloves, smashed
  • 1 cup loosely packed fresh basil leaves, roughly torn, plus more for garnish
  • 2 cups (480 ml) low-sodium vegetable or chicken broth
  • ½ cup (120 ml) heavy cream or full-fat coconut milk
  • 2 tablespoons extra-virgin olive oil
  • 1½ teaspoons fine sea salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Wash and core the tomatoes, then roughly chop into quarters. No need to peel.
  2. Peel and roughly chop the onion. Smash the garlic cloves with the side of a knife. Tear the basil leaves.
  3. Add the tomatoes, onion, garlic, basil, broth, olive oil, salt, pepper, and red pepper flakes (if using) to a 5-6 quart slow cooker. Stir gently.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until tomatoes are broken down and onions are tender.
  5. Stir in the balsamic vinegar.
  6. Blend the soup until smooth using an immersion blender directly in the slow cooker. Alternatively, let cool 10 minutes, then blend in batches in a regular blender, filling no more than halfway.
  7. Stir in the heavy cream or coconut milk. Start with ¼ cup and add more to taste.
  8. Taste and adjust seasoning with additional salt, pepper, or balsamic vinegar as needed.
  9. Ladle into bowls and garnish with fresh basil, a drizzle of olive oil, and a crack of black pepper.

Notes

For a deeper flavor, roast the tomatoes and onions at 400°F (200°C) for 25-30 minutes before adding to the slow cooker. To avoid watery soup, remove the lid during the last hour of cooking if using very juicy tomatoes. This soup tastes even better the next day. Freeze before adding cream for best texture.
