Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small mixing bowl, cream together softened butter and 1/4 cup granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add egg yolk and vanilla extract; mix on low speed until just combined.
  4. In a separate small bowl, whisk together flour, cream of tartar, baking soda, and salt.
  5. Gradually add dry ingredients to wet mixture, stirring with a spatula or wooden spoon until a soft dough forms.
  6. Chill dough in the refrigerator for 10-15 minutes (optional but recommended).
  7. In another small bowl, mix 1 tablespoon sugar and cinnamon for coating.
  8. Divide dough into 6 equal portions (about 1 tablespoon each). Roll each into a ball, then roll in cinnamon-sugar mixture until fully coated.
  9. Place dough balls on prepared baking sheet, spacing 2 inches apart.
  10. Bake for 8-10 minutes, until edges are set and lightly golden. Centers will look soft and puffed.
  11. Let cookies cool on baking sheet for 5 minutes, then transfer to a cooling rack.

Notes

Cream of tartar is essential for the classic tangy flavor and soft texture. If you don’t have it, substitute with 1/2 teaspoon lemon juice or white vinegar mixed into the dough. For best results, chill the dough for 10-15 minutes to prevent spreading. Store in an airtight container at room temperature for up to 3 days.
