  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the peaches by blanching them in boiling water for 30 seconds to loosen skins, then peel and chop into 1-inch pieces to yield about 4 cups.
  2. In a large heavy-bottomed saucepan, combine chopped peaches, brown sugar, ground cardamom, cinnamon, salt, and lemon juice. Stir well to mix.
  3. Simmer the mixture over medium-low heat for 30-35 minutes, stirring frequently to prevent sticking and burning. Add a splash of water if it becomes too dry.
  4. Optional: For a smoother texture, blend with an immersion blender or food mill, or mash some peaches for a chunkier texture.
  5. Stir in vanilla extract and adjust seasoning by adding more brown sugar or lemon juice if desired.
  6. Allow the peach butter to cool completely before transferring to clean jars for storage.

Notes

Do not use high heat to avoid burning the sugar. Stir frequently, especially as the mixture thickens. Blanch peaches to peel easily or leave skins on for a rustic texture. For creaminess, add a splash of coconut milk at the end. Store in airtight jars refrigerated up to two weeks or freeze up to three months.
