A quick and easy no-bake dessert dip made with cream cheese, caramel, and toffee bits. Perfect for fall gatherings, ready in just 10 minutes, and served with fresh apple slices or graham crackers.

Ingredients

Scale
  • 16 oz cream cheese, softened to room temperature
  • ½ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • ¼ cup powdered sugar
  • ¼ cup heavy cream, at room temperature
  • ½ cup caramel sauce, store-bought or homemade
  • ½ cup toffee bits
  • ¼ cup chopped pecans or walnuts (optional)
  • Flaky sea salt (optional)
  • Fresh apple slices (Granny Smith, Honeycrisp, or Fuji) for serving
  • Graham crackers or cinnamon graham crackers for serving
  • Vanilla wafer cookies for serving
  • Pretzels for serving

Instructions

  1. Soften the cream cheese by taking it out of the fridge at least 30-60 minutes before starting. It should be at room temperature and soft enough to press a finger into easily.
  2. Place the softened cream cheese in a large mixing bowl. Beat with a hand mixer on medium speed for about 2 minutes until completely smooth and fluffy. Scrape down the sides and bottom of the bowl halfway through.
  3. Add the brown sugar, powdered sugar, and vanilla extract to the bowl. Beat on medium-low speed until well combined and smooth, about 1 minute. Scrape down the bowl again.
  4. Pour in the heavy cream and beat on medium speed for another 30-60 seconds until the mixture lightens in color and texture, becoming creamy and spreadable. The consistency should be similar to thick frosting.
  5. Scoop the cheesecake dip into a serving bowl or pie plate and spread into an even layer using a spatula.
  6. Drizzle the caramel sauce over the top of the dip, leaving some areas without caramel if desired. If the caramel is too thick, warm it in the microwave for 10-15 seconds.
  7. Evenly scatter the toffee bits over the caramel layer.
  8. If using, sprinkle chopped nuts over the toffee bits and finish with a light dusting of flaky sea salt.
  9. Serve immediately or chill for 30 minutes to allow flavors to meld. If making ahead, cover and refrigerate for up to 2 days, adding toppings just before serving.

Notes

For best results, ensure cream cheese and heavy cream are at room temperature to avoid lumps. If dip seems too thin after mixing, refrigerate for 20 minutes to firm up. To keep apple slices from browning, toss them in lemon juice or Sprite. The dip can be stored in the refrigerator for up to 4 days, but add toppings just before serving for maximum crunch.
