This creamy grilled peach and burrata flatbread is a simple yet impressive summer meal featuring smoky-sweet grilled peaches, cool creamy burrata, and a drizzle of balsamic glaze on a crispy flatbread. It comes together in under 25 minutes and is perfect for summer entertaining.

  • 2 large pre-made flatbread or naan (about 8 inches each)
  • 2 large ripe but firm fresh peaches
  • 8 ounces burrata cheese (about 2 small balls)
  • 3 tablespoons extra virgin olive oil, divided
  • 2 tablespoons balsamic glaze
  • 1 small handful fresh basil leaves
  • Flaky sea salt (like Maldon), to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon honey (optional, if peaches aren’t sweet)
  • 1 handful arugula (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400°F for gas grill).
  2. Wash peaches, cut each in half, remove pit, and slice each half into 4-5 wedges about ½ inch thick. Pat dry with a paper towel.
  3. Brush peach wedges with 1 tablespoon olive oil. If peaches aren’t sweet, drizzle with honey and season with a pinch of salt.
  4. Brush both sides of flatbread with remaining 2 tablespoons olive oil.
  5. Grill flatbread directly on grates for 2-3 minutes per side until charred and crispy but still chewy. Remove and set aside.
  6. Grill peach wedges cut-side down for 3-4 minutes until deep grill marks appear, then flip and cook 2 more minutes on skin side until tender but still holding shape.
  7. Place grilled flatbread on a serving board. Tear burrata into 1-2 inch chunks and distribute evenly over flatbread.
  8. Arrange grilled peach wedges over the burrata.
  9. Drizzle with balsamic glaze.
  10. Tear fresh basil leaves and scatter over top. Sprinkle with flaky sea salt and black pepper.
  11. Serve immediately, cut into pieces with a sharp knife or pizza cutter.

Notes

For best results, use room temperature burrata (take out of fridge 20 minutes before using). Don’t skip oiling the peaches to prevent sticking. Watch flatbread carefully as it can burn quickly. Serve immediately for best texture. Leftovers can be stored in an airtight container in the refrigerator for up to 1 day and reheated in a 350°F oven for 5-7 minutes.
