  • 1 cup (90g) old-fashioned rolled oats
  • 1 cup (240ml) unsweetened almond milk
  • 1/2 cup (120g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15g) chia seeds
  • 12 tablespoons (15-30ml) honey or maple syrup
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt

Instructions

  1. In a mason jar or airtight container, combine the rolled oats, chia seeds, and a tiny pinch of salt. Stir to distribute the chia seeds evenly.
  2. Add the peanut butter and honey (or maple syrup) to the jar. If the peanut butter is thick, microwave for 10-15 seconds to soften.
  3. Pour in the almond milk and vanilla extract, pouring the milk directly over the peanut butter to help soften it.
  4. Spoon the Greek yogurt on top.
  5. Stir thoroughly with a fork or small whisk until everything is completely combined, with no dry pockets or clumps. The mixture will look thin at this point.
  6. Taste and adjust sweetness or salt as needed.
  7. Seal the jar and refrigerate for at least 4 hours, but ideally overnight (8-12 hours).
  8. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or at room temperature with desired toppings.

Notes

For best texture, use old-fashioned rolled oats, not quick or steel-cut. Chia seeds are key for creaminess. Warm peanut butter for easier mixing. Store in fridge for up to 5 days; add toppings fresh. For meal prep, leave toppings off until serving.
