This creamy no-churn salted caramel ice cream is made with just 4 simple ingredients and no ice cream maker. It’s rich, scoopable, and perfectly balanced with sweet caramel and flaky sea salt.

Ingredients

Scale
  • 2 cups (480 ml) cold heavy cream
  • 1 (14-ounce / 397 g) can sweetened condensed milk
  • 1/2 cup (120 ml) good-quality salted caramel sauce
  • 1 teaspoon flaky sea salt (like Maldon)

Instructions

  1. Chill your large mixing bowl and hand mixer beaters in the freezer for 10-15 minutes.
  2. Pour the cold heavy cream into the chilled bowl. Using a hand mixer on medium-high speed, whip the cream until stiff peaks form, about 3-5 minutes.
  3. Pour the entire can of sweetened condensed milk over the whipped cream. Gently fold it in with a rubber spatula until fully incorporated and smooth.
  4. Pour about 1/4 cup of the salted caramel sauce over the mixture. Gently swirl it through with a knife or skewer to create ribbons. Sprinkle half of the flaky sea salt over the top.
  5. Transfer the mixture to a 9×5-inch loaf pan. Drizzle the remaining 1/4 cup of caramel sauce over the top and swirl gently. Sprinkle the remaining flaky sea salt over the surface.
  6. Press a piece of plastic wrap directly onto the surface of the ice cream. Freeze for at least 6 hours, preferably overnight.
  7. To serve, let the loaf pan sit at room temperature for 5-10 minutes. Scoop with a warm ice cream scoop. Drizzle with extra caramel sauce and a pinch of flaky salt if desired.

Notes

For best texture, ensure the heavy cream is very cold and whipped to stiff peaks. Press plastic wrap directly onto the surface to prevent ice crystals. The ice cream keeps well for up to 2 weeks in the freezer. Flavors deepen after a day or two.
