  • ½ ripe banana (mashed)
  • 2 tablespoons creamy peanut butter (natural preferred)
  • 1 tablespoon maple syrup or honey (optional, adjust to taste)
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1 tablespoon chia seeds, 1 teaspoon cocoa powder, 1 tablespoon ground flaxseed, sliced banana or berries for topping

Instructions

  1. In a small bowl, mash half a very ripe banana with a fork until mostly smooth with just a few tiny lumps.
  2. In a mason jar or container, combine the mashed banana, ½ cup milk, ¼ cup Greek yogurt, 2 tablespoons peanut butter, 1 tablespoon maple syrup, ½ teaspoon vanilla extract, and a pinch of salt. If using chia seeds or flaxseed, add them now.
  3. If using a jar with a tight lid, screw on the lid and shake vigorously for about 30 seconds until well combined. If using a bowl, whisk until smooth.
  4. Pour in ½ cup rolled oats and stir gently until all oats are submerged. Do not overmix.
  5. If desired, add toppings like sliced banana or berries now, or wait until morning to keep them fresh. Seal the jar tightly.
  6. Refrigerate for at least 6 hours, but overnight (8-12 hours) is ideal.
  7. In the morning, stir the oats. If too thick, add a splash of milk. Top with fresh sliced banana, a drizzle of peanut butter, chopped peanuts, and a pinch of flaky salt if desired. Serve cold or microwave for 30-60 seconds for warm oats.

Notes

Use rolled oats, not quick or steel-cut oats. Mash banana thoroughly for creamiest texture. Let oats sit at least 6 hours; they get better on day 2. Adjust liquid ratio as needed. Store in refrigerator for up to 5 days. Freeze for up to 3 months (leave headspace). Reheat in microwave or stovetop if desired.
