  • 1 cup (240ml) milk (any kind)
  • 1/4 cup (64g) creamy peanut butter
  • 1 medium ripe banana
  • 12 tablespoons (15-30ml) maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a medium bowl or mason jar until mostly smooth with a few small lumps.
  2. Add milk, peanut butter, maple syrup, and vanilla extract to the mashed banana. Whisk until the peanut butter is fully incorporated and the mixture is smooth.
  3. Add rolled oats, chia seeds, and a pinch of salt. Stir until all oats are coated in the liquid.
  4. Divide the mixture evenly between 2-3 mason jars or airtight containers.
  5. Refrigerate for at least 4 hours, but preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds for a warm breakfast. Top with sliced banana and extra peanut butter if desired.

Notes

For best texture, use rolled oats (not quick-cooking or steel-cut). The chia seeds are optional but help create a thicker, creamier texture. Toppings like sliced banana should be added just before serving to prevent browning. The oats will keep in the fridge for up to 5 days and can be frozen for up to 3 months.
