  • 1.5 pounds boneless, skinless chicken breasts (about 3 medium)
  • 2 cans (15 ounces each) Great Northern beans, drained and rinsed
  • 2 cans (4 ounces each) diced green chiles
  • 1 large yellow onion, diced (about 1.5 cups)
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (plus more to taste)
  • Black pepper to taste
  • 4 ounces cream cheese, softened to room temperature
  • 1/2 cup plain Greek yogurt
  • Juice of 1 lime
  • For garnish (optional): fresh cilantro, shredded Monterey Jack cheese, diced avocado, tortilla chips, sour cream, pickled jalapeños

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the diced onion and cook for about 5 minutes until soft and translucent. Add the minced garlic and cook for another minute until fragrant. Scrape into the slow cooker.
  2. To the slow cooker, add the drained and rinsed white beans, both cans of diced green chiles, ground cumin, dried oregano, smoked paprika, and 1 teaspoon salt. Stir to combine.
  3. Nestle the chicken breasts into the mixture, pushing them down so they’re mostly submerged. Pour in the 4 cups of chicken broth. Do not stir too much.
  4. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken shreds easily with a fork.
  5. Remove the chicken from the slow cooker and shred with two forks on a cutting board.
  6. Ladle about 2 cups of the bean-and-broth mixture into a blender. Add the softened cream cheese. Blend until smooth (about 30 seconds). Remove the center cap from the blender lid and cover with a towel to let steam escape.
  7. Pour the blended mixture back into the slow cooker along with the shredded chicken. Stir in the Greek yogurt and fresh lime juice. Taste and adjust seasoning. Let heat through for about 10 minutes on low (do not boil).
  8. Serve hot with desired garnishes.

Notes

Don’t skip sautéing the onions and garlic—it builds flavor. Let cream cheese and Greek yogurt come to room temperature to prevent curdling. For a thicker chili, mash some beans against the side of the slow cooker or cook uncovered for 15-20 minutes. For a dairy-free version, use vegan cream cheese and coconut yogurt.
