Instructions

  1. Preheat oven to 425°F (220°C). Position a rack in the middle of the oven.
  2. Wash the delicata squash thoroughly and pat dry. Cut off both ends (about ¼ inch from each tip). Slice crosswise into ½-inch thick rings. Remove seeds with fingers or a small spoon.
  3. In a small bowl, combine smoked paprika, garlic powder, kosher salt, and black pepper.
  4. Place squash rings in a large bowl and drizzle with olive oil. Toss gently to coat. Sprinkle spice mixture over the squash and toss again until evenly coated.
  5. Line a large baking sheet (18×13 inches) with parchment paper or a silicone mat. Arrange squash rings in a single layer without overlapping, leaving about ½ inch between each ring.
  6. Roast for 15 minutes without opening the oven door. If using fresh herbs, sprinkle them over the rings after 15 minutes. Continue roasting for another 10-15 minutes, until tops are golden and edges are caramelized (total 25-30 minutes).
  7. Remove from oven and let rest on the pan for 2-3 minutes. Transfer to a serving platter with a metal spatula. Sprinkle with flaky sea salt if desired. Serve immediately.
