Instructions

  1. Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper if using.
  2. Separate the seeds from the pumpkin guts. Scoop the seeds and stringy pulp into a large bowl of cold water. The seeds will float to the top; use your hands to gently separate them.
  3. Rinse the seeds thoroughly in a colander under cold water, rubbing gently to remove any remaining pulp. Discard any dark or shriveled seeds.
  4. Bring 4 cups of water and 1 tablespoon of salt to a rolling boil in a large pot. Add the pumpkin seeds and boil for exactly 10 minutes.
