  • 1/3 cup (110g) honey (or maple syrup for vegan)
  • 1 1/2 cups (135g) rolled oats (old-fashioned; use certified gluten-free if needed)

Instructions

  1. Measure 1 cup (240g) of creamy peanut butter into a mixing bowl. If using natural peanut butter, stir well to incorporate the oil. Let it come to room temperature if refrigerated.
  2. Add 1/3 cup (110g) of honey over the peanut butter. If honey is crystallized, warm the jar in hot water until loosened.
  3. Stir the peanut butter and honey together with a spatula or wooden spoon until uniform in color and texture, about 30 seconds.
  4. Add 1 1/2 cups (135g) of rolled oats. Fold in gently, then stir until evenly distributed. The mixture should be crumbly but hold together when pressed. If too dry, add a teaspoon more honey or a splash of milk; if too wet, add a tablespoon more oats.
  5. Optional: Chill the mixture in the fridge for 10-15 minutes for easier rolling.
  6. Scoop about 1 tablespoon of the mixture and roll between your palms to form smooth balls. If sticky, lightly dampen hands with water or rub with a tiny bit of oil. Place on a parchment-lined baking sheet or plate. Makes about 16-18 balls.
  7. Chill the balls in the refrigerator for at least 30 minutes (or 15 minutes in the freezer) to firm up.
  8. Enjoy chilled. Store leftovers in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.

Notes

For best results, use room temperature ingredients. Chill the mixture before rolling for easier handling. The balls taste even better after a day in the fridge as flavors meld. Add-ins like mini chocolate chips, shredded coconut, or a pinch of sea salt can be added without changing the base formula.
