A quick and creamy beef stroganoff made in a crockpot with ground beef, mushrooms, and sour cream. Ready in just 30 minutes, it’s perfect for busy weeknights.

  • 1 pound (450g) ground beef (80/20 blend)
  • 1 medium yellow onion, diced (about 1 cup)
  • 8 ounces (225g) cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup (240ml) beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup (240g) full-fat sour cream
  • 8 ounces (225g) wide egg noodles
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat until no longer pink, about 5-6 minutes. Transfer to a crockpot using a slotted spoon, leaving about 1 tablespoon of fat in the pan.
  2. In the same skillet, melt 2 tablespoons of butter over medium heat. Add the diced onion and cook for 2 minutes until softened. Add the sliced mushrooms and cook for 4-5 minutes until they release liquid and start to brown. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Pour about 1/4 cup of the beef broth into the skillet and scrape up any browned bits. Pour the entire mixture into the crockpot with the beef.
  4. Add the remaining 3/4 cup beef broth, Worcestershire sauce, and Dijon mustard to the crockpot. Stir to combine.
  5. Cover the crockpot and cook on high for 20 minutes.
  6. While the crockpot cooks, bring a large pot of salted water to a boil. Cook the egg noodles according to package directions until al dente, about 6-8 minutes. Drain well (do not rinse).
  7. After 20 minutes, turn off the crockpot (or switch to warm). Let it sit for 1 minute to cool slightly. Stir in the sour cream until fully incorporated and smooth.
  8. Add the drained egg noodles to the crockpot and gently fold into the sauce until coated. Season with salt and pepper to taste. Garnish with fresh parsley and serve immediately.

Notes

Do not skip browning the beef—it adds essential flavor. Use full-fat sour cream and add it at the end off the heat to prevent curdling. For a gluten-free version, use gluten-free pasta or serve over rice. For a dairy-free version, use vegan butter and dairy-free sour cream.
