  • 8 oz cream cheese, softened to room temperature
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup cooked bacon bits (about 6 strips of bacon, crumbled)
  • 1 cup shredded cheddar cheese
  • 4 large (10-inch) flour tortillas

Instructions

  1. Soften the cream cheese by leaving it at room temperature for about 30 minutes or microwaving in 10-second bursts until soft but not melted.
  2. In a mixing bowl, combine the softened cream cheese and ranch seasoning packet. Beat with a hand mixer or sturdy spatula until smooth and fluffy.
  3. Fold in the crumbled bacon and shredded cheddar cheese until evenly distributed. Taste and adjust seasoning if needed.
  4. Lay the flour tortillas flat on a cutting board. If stiff, warm them in the microwave for about 10 seconds to make pliable.
  5. Divide the filling evenly among the tortillas. Spread in a thin, even layer, leaving a 1/2-inch border around the edges.
  6. Starting at one end, roll each tortilla tightly but gently. Place seam-side down on the cutting board.
  7. Wrap each roll tightly in plastic wrap and refrigerate for at least 1 hour, preferably 2-3 hours.
  8. When ready to serve, unwrap the rolls and slice into 1-inch pieces using a sharp serrated knife. Wipe the knife clean between cuts for neat slices.
  9. Arrange on a platter and serve cold or at room temperature.

Notes

For best results, chill the rolls for at least 1 hour before slicing. Use room temperature cream cheese to avoid lumps. A serrated knife gives the cleanest cuts. These pinwheels taste even better the next day.
