  • 1 teaspoon chili powder (preferably smoky)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt (plus more to taste)
  • Zest of 1 lime (about 1 teaspoon)
  • Juice of ½ lime (about 1 tablespoon)
  • Pinch of cayenne pepper (optional, for extra heat)

Instructions

  1. Preheat your air fryer to 350°F (175°C). Most air fryers need about 3 minutes to preheat.
  2. Rinse the pumpkin seeds in a fine-mesh strainer under cold water. Pick out any pumpkin guts or stringy bits.
  3. Dry the seeds thoroughly by spreading them on a clean kitchen towel or paper towels and patting them completely dry.
  4. In a medium mixing bowl, combine the dried seeds with olive oil, chili powder, garlic powder, salt, and cayenne if using. Toss until every seed is coated.
  5. Spread the seasoned seeds in a single layer in the air fryer basket. Do not overcrowd.
  6. Cook for 5 minutes, then shake the basket or stir the seeds with a spatula.
  7. Cook for another 3-5 minutes, checking frequently after the 3-minute mark. Seeds are done when lightly browned and smell toasty.
  8. Remove the basket and immediately toss the hot seeds with the lime zest and lime juice.
  9. Let the seeds cool completely in the basket or on a plate. They will continue to crisp up as they cool.
