Perfect for game day, potlucks, or a quick weeknight indulgence, it features a perfect balance of cream cheese, ranch, buffalo sauce, and shredded chicken, topped with melted cheddar cheese.

  • ½ cup ranch dressing
  • ½ cup buffalo sauce (such as Frank’s RedHot)
  • 2 cups cooked, shredded chicken (from a rotisserie chicken or canned, drained)
  • 1 cup shredded cheddar cheese, divided
  • ¼ cup crumbled blue cheese (optional)
  • Tortilla chips, celery sticks, carrot sticks, or crackers for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Shred the chicken using two forks (if using rotisserie chicken, pull meat off bones first; if using canned, drain well and flake).
  3. In a medium mixing bowl, combine the softened cream cheese and ranch dressing. Use a hand mixer or sturdy spoon to blend until smooth.
  4. Add the buffalo sauce and mix until fully incorporated. Taste and adjust spiciness if desired.
  5. Fold in the shredded chicken, ½ cup of the shredded cheddar cheese, and the crumbled blue cheese (if using). Mix gently until evenly distributed.
  6. Transfer the mixture to an 8×8-inch baking dish or small oven-safe skillet. Spread into an even layer. Sprinkle the remaining ½ cup of cheddar cheese on top.
  7. Bake for 20-25 minutes, until hot and bubbly. For a browner top, broil for the last 2 minutes, watching closely.
  8. Let the dip rest for 5 minutes before serving. Serve warm with tortilla chips, celery sticks, carrot sticks, or crackers.

Notes

For best results, use full-fat cream cheese and shred your own cheddar cheese from a block. If making ahead, assemble the dip (without the top layer of cheese) up to 24 hours in advance, refrigerate, then add cheese and bake, adding 5-10 minutes to the baking time. To keep warm at a party, transfer baked dip to a small slow cooker set to warm, stirring occasionally.
