This crockpot beer cheese dip is the ultimate game day snack—creamy, cheesy, and packed with flavor from sharp cheddar, cream cheese, and a light lager. It’s easy to make, stays warm for hours, and is guaranteed to disappear before the chips run out.

  • 16 oz (450g) sharp cheddar cheese, freshly shredded
  • 8 oz (225g) cream cheese, softened
  • 12 oz (355ml) lager beer (light or medium lager like Coors, Budweiser, or Yuengling)
  • 1 medium shallot, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground cayenne pepper (or more to taste)
  • ½ teaspoon salt
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Shred the cheddar cheese on the large holes of a box grater. Set aside.
  2. Finely dice the shallot and mince the garlic until almost paste-like.
  3. In a small bowl, whisk together 1 tablespoon cornstarch with 2 tablespoons cold water until smooth. Set aside.
  4. Layer the ingredients in the crockpot: start with shredded cheddar, then add softened cream cheese in spoonfuls. Sprinkle shallot, garlic, Dijon mustard, Worcestershire sauce, smoked paprika, cayenne, and salt over the top. Pour the beer in slowly. Do not stir yet.
  5. Cover and cook on low for 1 hour. After 1 hour, stir well. The cheese should be mostly melted.
  6. Add the cornstarch slurry and stir thoroughly.
  7. Cover and cook on low for another 30 minutes. Stir again. The dip should be smooth, creamy, and slightly thickened. If too thin, cook uncovered for 15-20 minutes.
  8. Adjust seasoning to taste. Switch crockpot to ‘warm’ setting for serving. The dip will stay perfect for 2-3 hours.

Notes

Shred your own cheese for the smoothest texture. Pre-shredded cheese contains anti-caking agents that can make the dip grainy. For a spicier version, add 2 tablespoons hot sauce and extra cayenne. Leftovers keep in the fridge for up to 4 days and taste even better the next day.
