Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts (about 34 breasts)
  • 1 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 4 tablespoons unsalted butter, cut into cubes
  • 1 tablespoon ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 cup chicken broth
  • 12 slider buns (brioche, potato, or Hawaiian rolls)
  • 4 tablespoons salted butter, melted (for buns)
  • 1 tablespoon sesame seeds or everything bagel seasoning (optional)
  • 2 cups shredded green cabbage (or bagged coleslaw mix)
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Season and Sear (Optional): Pat chicken breasts dry, season with salt and pepper. Heat 1 tablespoon oil in a skillet over medium-high heat and sear chicken for 2-3 minutes per side until golden brown.
  2. Build the Sauce: In the slow cooker, whisk together buffalo hot sauce, chicken broth, garlic powder, and smoked paprika. Add butter cubes and sprinkle ranch seasoning on top.
  3. Add the Chicken: Nestle chicken breasts into the sauce, turning to coat. Keep in a single layer if possible.
  4. Low and Slow: Cover and cook on LOW for 4-5 hours or on HIGH for 2.5-3 hours, until chicken shreds easily and reaches 165°F.
  5. Shred the Chicken: Transfer chicken to a bowl and shred with two forks or a hand mixer on low speed.
  6. Return to the Sauce: Return shredded chicken to the slow cooker and stir to coat. If sauce is too thin, cook uncovered on HIGH for 10-15 minutes to reduce.
  7. Toast the Buns: Preheat broiler. Split slider buns and place cut-side up on a baking sheet. Brush with melted butter and broil for 1-2 minutes until golden.
  8. Assemble the Sliders: Spoon buffalo chicken onto bottom buns, top with pickled slaw (if using), and place top buns on. Serve immediately.

Notes

For best texture, shred chicken while warm. Toast buns to prevent sogginess. The chicken tastes even better the next day as flavors meld. Adjust heat by using mild or hot buffalo sauce.
